IKEA Meatball Stroganoff with Hashbrowns

Headed to IKEA?  Be sure to grab a bag of frozen meals so you can prepare this quick meal for your family.  The ingredient list is short and for an added twist serve the meatball stroganoff with hash browns in place of more traditional egg noodles. Doesn’t get much easier than this.

Sauté chopped onions and diced garlic in olive oil.

Add sliced mushrooms  and sprinkle the onions and mushrooms with flour.  This helps to create a nice thick sauce when the broth is added.

After the flour is mixed well to coat the vegetables,  add broth, Worcestershire, paprika, and mustard.

IKEA Meatball Stroganoff

Mix well and heat until the broth begins to boil.  Add frozen meatballs and turn down to a simmer.  Cover and cook until meatballs are heated through, approximately 10-minutes.

Just before serving add sour cream and mix well.

Serve the IKEA meatball stroganoff with a fresh salad and hashbrowns.  I used the delicious frozen hash browns found at Trader Joe’s.  Pop them in the oven when you begin to sauté the vegetables and they will be ready when the stroganoff is ready for serving.  YUM!

  1. Add olive oil to skillet over medium-high heat and saute onions and garlic until tender and fragrant.
  2. Add mushrooms and cook until tender.
  3. Sprinkle flour over vegetables and mix well to coat vegetables with flour.
  4. Add broth, Worcestershire, paprika, and mustard. Heat until broth begins to boil.  
  5. Add frozen meatballs and turn down to a simmer.  Cover and cook until meatballs are heated through, approximately 10-minutes.
  6. Remove lid and simmer over low heat until sauce has thickened.
  7. Mix in sour cream just before serving.
  8. Serve IKEA stroganoff meatballs over hasbrowns with a fresh salad on the side.
