A dry chimichurri works best for these Cheesy Chimichurri Beef Rolls. Here’s a source for dry chimichurri seasoning. I lucked out and found it at the Costco near my home. It’s easy to prepare your own dry chimichurri blend. Just follow the recipe at Asado Argentina. Blend the dry seasoning mix with oil and vinegar for meat, vegetables or sandwiches. Blend with cream cheese and spread on meat or sandwiches to enjoy this delicious combination of herbs and spices.

How to prepare Cheesy Chimichurri Beef Rolls

Grab a mixing bowl and add softened cream cheese. Add 1 tablespoon of garlic powder, 3 tablespoons of chimichurri, and a splash of red wine vinegar. Mix well.

Spread roast beef on plastic food wrap. The beef ends never have enough cheese spread. In order to minimize wasted ends, make the roll longer and simply use the two ends as a taste test. Cooks can’t serve food they haven’t tried. Right?!?

Spread beef to prepare for smearing with chimichurri cream cheese.

Spread the herbed cream cheese evenly over the beef. The cheese must be soft. Use two spoons to pull the cheese across the surface of the beef. Press the edges of the beef with your fingers to prevent tearing the meat. Patience required, but worth the delicious appetizer and compliments.

Spread the herbed cream cheese across the entire surface of the beef getting as close to the edges as possible. Fold over the long edge and continue to roll over-and-over. Wrap the beef roll in the plastic wrap and refrigerate for at least one-hour before slicing.

Slice the beef roll from one end to the other. Clean the cheese from the knife as needed to prevent the blade from dulling. Applying excessive pressure on the knife to cut through the beef roll will lead to oblong versus round slices. No worries! Still tastes great!

Place the sliced beef rolls on a serving plate. Sprinkle with fresh parsley if available. Enjoy.
