Smoked salmon, cucumber and caper salad

Need a quick, healthy meal? Try this smoked salmon, cucumber and caper salad. It comes together quickly and is perfect for lunch on the go or dinner at home. It’s easy to keep these simple ingredients on hand to whip this dinner together after work, sports, or evening commitments.

Way healthier than take out or delivery. Also perfect for those following a Keto or Metabolic Factor eating plan. I found this salad to be very satisfying with a little avocado oil mayonnaise and sautéed onions, peppers and garlic on the side.

Preparing the ingredients

For the salad, slice one cucumber and one quarter of a red onion, transfer everything to a bowl and add one tablespoon of capers.

The Smoked Dill Sockeye Salmon filet I used is available at Target. The salmon is sold in a 4 ounce package, which is perfect for 2 servings.

Slice the smoked salmon into squares and put it in the bowl with the cucumber, onion and capers. After mixing everything together, serve the salmon salad on a plate with avocado oil mayonnaise and sautéed peppers. This way you can use your fork to add as much or as little mayo as desired. You can also add the mayo directly to the salad (this is what I did with the leftovers for lunch the next day) or leave it off altogether.

Leftovers

Put the leftover smoked salmon, cucumber and caper salad, along with the remaining sautéed peppers in a rubbermaid container . Top with a tablespoon of the avocado oil mayonnaise. Perfect for lunch.
