Lemon Caper Tuna Steaks with Artichoke Hearts
This healthy meal comes together quickly and is easy to prepare with ingredients you can stock in your freezer and pantry for those nights when you are short on time or don't want to eat out.

- 4 tuna steaks
- 1 tbsp olive oil
- 2 cloves garlic minced
- 1 shallot minced
- 1/2 cup chicken broth
- 1/4 cup dry white wine optional
- 1 16 oz. can artichoke hearts
- 1 cup green beans
- salt to taste
- pepper to taste
- 1 lemon zested
- 2 tsp capers
Place non-skillet over medium-high heat
Add tuna steaks and sear approximately 3 minutes on each side
Remove tuna steaks and set aside
Add olive oil to skillet and place over medium heat
Add garlic and shallot to skillet and heat until garlic is fragrant
Add broth and wine and heat over medium flame until liquid is warm, approximately 4-5 minutes
Add artichoke hearts, green beans, lemon zest, lemon juice and capers. Heat until vegetables are warm
Add tuna steaks to skillet and warm
Place tuna steaks on plate and cover with lemony, caper sauce. Enjoy!
To thicken the sauce you can add a small amount of flour or cornstarch mixed in water or broth to the skillet until you reach the desired consistency.
Serve over rice, pasta or sautéed spinach.
